Moonlight cascades down, and the cicadas sing in alternating waves. Brewing a pot of hot tea at a time like this seems too much effort, so I use a special method: cold-brewed white tea. It sounds very modern, but cold-brewing tea has a long history. The ancients would brew tea with spring water in summer. Now we simply use a refrigerator instead of mountain spring water. Cold-brewed tea liquor is clean, sweet, smooth, and completely free of bitterness or astringency, making it ideal for summer nights.<\/p>\n<p>The method is very simple. Take three to five grams of white tea, place it in a glass bottle, add room-temperature purified water, screw on the lid, and put it in the fridge. Wait eight hours or more, and the next morning it is ready. The liquor is pale yellow and translucent. It enters the mouth with clean sweetness and a subtle floral note. This taste is entirely different from hot-brewed: cleaner, purer, more suitable for summer. Every summer I prepare cold-brewed white tea. It has become my summer essential. Sometimes I add a few goji berries or red dates for a richer flavor.<\/p>\n<p>The traditional wellness value of cold-brewed tea lies in its low caffeine content. Because cold water is used, the amount of caffeine extracted from the leaves is far less than with hot brewing. So you can drink it at night without worrying about sleeplessness. Additionally, the polyphenol extraction is gentler, causing less irritation to the stomach. People with sensitive digestion find cold-brewed tea more comfortable than hot-brewed. I have a friend with a sensitive stomach: hot tea upsets it, but cold-brewed white tea causes no problems at all. This is the advantage of cold-brewing: preserving the tea&#8217;s beneficial properties while reducing gastric irritation.<\/p>\n<p>White tea is inherently the most suitable tea for cold-brewing. Its production process is the simplest, retaining the most natural substances. During cold-brewing, the floral aroma and sweetness of white tea release gradually, while bitter and astringent compounds are extracted minimally. This is why cold-brewed white tea tastes so wonderful. I have tried cold-brewing different teas: raw tea turns bitter, ripe tea turns stale, black tea turns astringent. Only white tea is perfect. This is a lesson I learned through my own experiments. Tea friends, do try it.<\/p>\n<p>Tea has grades; all may enjoy it regardless of status.<\/p>\n<p>Cold-brewed white tea on a summer night has another advantage: it serves as a healthy alternative beverage. Many people drink soda, fruit juice, or milk tea in summer. These drinks are high in sugar and additives, offering little benefit. But cold-brewed white tea has zero sugar, zero calories, and is traditionally associated with antioxidant properties. I always tell the young people around me: &#8220;Want something cold? Try cold-brewed white tea. It is ten times healthier than bubble tea.&#8221; They try it, love it, and then keep asking me for tea.<\/p>\n<p>A cup of cold-brewed white tea under the moonlight: cool, clean, and calming. This is the taste of summer. Modern people always talk about wellness, but wellness does not need to be complicated. A cup of cold-brewed white tea, a cool evening: that is the simplest form of wellness. Nature has prepared everything for us. We only need to pause and savor it slowly.
